Dreaming of the Tropics

As the Pineapple Express dumps more rain on the Bay Area this donut seems like destiny. Truly a ray of sunshine in the midst of what seems like our 100th day of rain, this delicious wonder has a fruity tangy filling that has actual pineapple pieces in it. The fruit provides some chunky texture to the light and not-too-sweet cream base. The part of the donut encapsulating the filling is a fry bread like pastry that is surprisingly light and airy with a little savoriness. Once this gem is rolled in just the right amount of sugar and filled with cream it is a perfect treat on this cold, wet, grey day in the Bay. While biting into it I could almost imagine myself on a warm sunny beach, under a palm tree, drinking a piña colada. Sigh. Well done once again Bun Appétit, thanks for making my Friday morning a little brighter.
